menu tips

In addition to the weekly weigh-in, would anyone be interested in sharing recipes and/or suggestions for great meals? I'm always looking to make my life easier by having a scheduled food plan--and I like what the Self Challenge suggests, but a lot of it is too involved for my schedule. I end up sticking with the basics- for weeks on end.

Most pressing- I'm looking for a great low cal salad dressing. My lunch for the past week or so has been a huge salad with tomatos, lettuce, carrots, turkey, a hard boiled egg (no yolk), and feta, but I've been stuck using a not-so-great lite dressing that's been in my fridge for...awhile.

Are there any that y'all like? I'd rather enjoy my lunch than suffer through it :)

I would LOVE to share recipes! I love to cook and I'm always coming up with ways to eat what I want - just healthier.

I've been using italian dressing a lot lately because I can have a lot more than ranch or other creamy ones. I have several recipes, I'll go through and look at what I can give you.

Aside from that I did make some coconut shrimp the other day that weren't too bad (as long as you consider the coconut part of your sweets for the day)

Hi Beth--I think that sounds like a great idea! And I personally am someone who is looking for a tasty yet low-cal dressing. I was thinking I could make some of my own...I am a ranch lover, so it is tough eating salad with anything else. Any recipes for dressings that we can share (or any other recipes) would be great!

I love ranch dressing!!!!!! But I hate the fat and calories! :P I eat Hidden Valley's Lite Ranch.. it's the best to me. It cuts the fat/calories, but it still has a lot of taste. Also try making the dressing using a dry packet for cream dressing... then you can use fat-free mayo or sour cream. I like Kraft's Fat Free Caesar Italian as well. Coconut shrimp sounds gooooood...
