New week

I lost another pound this week so my total lost is 13 pounds. I feel like I have my motivation back again. I will measure again tonight since I never did it last week. My fiance has committed to working out more with me and watching his own diet so that has helped me a lot. He might even do the 5K with me Saturday. Btw, this past weekend it poured so I didn't participate in the 5K. I didn't feel that guilty since I have another one this weekend. I still worked out Saturday to make up for it however. I bought pistachios and trail mix to keep at my desk while I'm at work. I also have some canned fruits in the fridge. It's helped me curb all my snack cravings. I made the recipe below tonight and loved it. I used light Ragu instead of tomatoes and it turned out great.

Quick question: What are you guys doing about new clothes? I want to get a few new items for the summer but I'm hesitant to buy anything because I'm losing weight.

Chicken Capri
Serves 4
.
1 cup reduced-fat ricotta cheese
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 boneless, skinless chicken breast halves
1/2 teaspoon garlic powder
2 tablespoons extra-virgin olive oil
1 cup crushed tomatoes
4 slices reduced-fat mozzarella cheese

InstructionsIn a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.
Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side. Place the chicken breasts, side by side, in a large baking dish and allow to cool.
Preheat the oven to 350°F.
Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each chicken breast with 1 slice mozzarella. Bake for 20 minutes, or until a thermometer inserted in the thickest portion of a breast registers 170°F and the juices run clear.

I've had that chicken capri- it's great. Even though I'm not a huge fan of the south beach diet for weight loss (i think it's hard to exercise when you're cutting out all carbs for those first two weeks), i LOVE all of their phase 2/phase 3 recipes.

Yeah I've never actually done the diet, but I do like some of the recipes as well.
